The Empress ships catered to a sophisticated Chinese passenger. Iris kept a set of seven Chinese menus. In Chinese the passengers are assured of the high quality of the food and service, and the Chief Steward’s willingness to accommodate any special needs.
There were Chinese waiters and stewards. If fresh Chinese vegetable were not available, they carried canned items, like bitter melon for soup. The ship had a Chinese language library, with Chinese playing cards, Mah Jong, mainland newspapers and other diversions.
